Otricoli boasts a long-standing tradition of sheep farming, which has given rise to simple yet genuine cheeses, a symbol of local production that has endured over time. Two local farms, managed by brothers from the Di Luvio family, carry on this tradition with passion and respect for nature. In the area, another important producer is the Veneri farm in Calvi dell’Umbria.
They produce fresh ricotta, primo sale, semi-aged cheeses, and aged cheeses, all made from sheep’s milk using artisanal methods. These products carry the taste of clean pastures, skilled hands, and a slower pace of life that can still be savoured in local markets and during regional events.
